If you got recent spam from an email address at this domain, it wasn’t me … I’ve received about 200 email failure notices, which means that someone in spain used my address to send spam. I have already reported them!

It’s hard to believe that an uncontrollable, wild Springer Spaniel would be able to become a therapy dog, but it has really happened!

Ella is still wild and crazy at home, but once her special collar and leash go on, she transforms into quite a lady. She is gentle, follows all her commands, and so sweet with everyone she meets.

We always knew that Eliza was a wonderful therapy dog, and we suspect Mr. Darcy will be good also, but Ella’s accomplishments are a wonderful bonus!

I make cookies to send to Ed’s staff on the first Friday of each month. The November cookies were called Nainaimo Bars.

A creamy, chocolatey treat, Nanaimo Bars originated in Canada in the city of Nanaimo, British Columbia (otherwise they would be called New York Bars, or New Brunswick Bars, eh?)

I first heard of them from the Christopher Guest mocumentary, A Mighty Wind (2003). Catherine O’Hara’s character, Mickey Crabbe, responds to the question “Would you consider doing both parts?” with …
“No, I’d consider going home, making a nice tray of nainaimo bars, lying in bed and watching TV”

I was curious, and after a little research, I decided the recipes looked really yummy. I finally make them, and they got the most recipe requests of any Cookie Day (ever).

I used this recipe for Nainaimo Bars.

Note — I could not find Custard Powder. I believe it is available in specialty markets, and where British foods are sold. For a double recipe (4 tablespoons custard powder) I substituted 3 tablespoons Corn Starch, and 1 tablespoon instant Vanilla Pudding powder. It worked just fine.

Ella did her first Therapy Dog visit last Friday, and we are planning another one for Monday morning. She should have her observed visits done and be a certified Therapy Dog by the end of the month.

All the pups are looking forward to Thanksgiving. Any holiday where the main focus is food is great with them! I have my fresh organic turkey on order, and when I pick it up tomorrow, the festivities truly begin!
